PER.RI.CON.E Project: the final conference at CNR-IBBR in Palermo

Wednesday 25 June 2025, at the Conference Hall of the CNR-IBBR of Palermo, the final conference of the PER.RI.CON.E project was held.

The day was a precious occasion during which our head of the technical-scientific area of IRVO, Dr. Daniele Oliva, illustrated the innovations in the wine production of Perricone with particular attention to the use of non-Saccharomyces yeasts.

In this regard, he explained: «We have dedicated ourselves to a series of small tests to study the behaviour of these yeast strains on Perricone musts, collecting all the necessary information. This allowed us to develop improvement protocols that were transferred to the companies, which applied them during the recent harvest.»

The meeting turned out to be an unmissable event for operators in the wine sector, researchers And enthusiasts, offering insights into innovation, protection and promotion of the wine heritage.

During the event, the following also spoke: Representatives of partner companies of the project, sharing their experiences and results obtained in the field.
