The results of the research of the Regional Institute of Wine and Oil were transferred to five wineries (Cantine Settesoli, leader, Cantina Primavera, Cantine Colomba Bianca, CVA Soc. Coop. Canicattì and Cantina Nicosia) which produced less alcoholic reds with non-Saccharomyces yeasts, white and red wines without sulphites, and red wines with greater longevity.
