IRVOS at Enoforum 2013

The preliminary selection was very selective (more than 70 works participated in the competition) and in the last phase the commission will have to examine 26 works; of these only two, one from IRVOS and one from the University of Naples, are from universities and/or research bodies in southern Italy. Three other communications will be presented at Enoforum 2013 by the "Biotechnologies" unit coordinated by Dr. Daniele Oliva and will concern the "Qualitative improvement of red wines through the use in the cellar of Candida zemplinina isolated in Sicily", the "Oenological use of a Kluyveromyces marxianus yeast strain from the island of Linosa" and finally the "Sicilian white wines without the use of sulphites". The first two works relate to the results of experimental winemaking, respectively red and white, conducted in recent years at the Dalmasso winery in Marsala with the method of sequential fermentation of different yeast species. The latest work finally discloses the results of the experimental productions of Grillo without sulphites made in the 2012 harvest and recently presented for tasting at the last Vinitaly.
