Founded in 1100 by Count Ruggero d&#039;Altavilla, the Santa Anastasia Abbey became a cultural and working hub for the inhabitants of the Madonie. Vines, wheat, olive trees and various species of fruit trees were planted. The land proved to be particularly suitable for the cultivation of vines and in fact the wine was requested by the most important baronial and bishop&#039;s tables in Sicily. The foundation of the city of Castelbuono in 1316 coincided with the abandonment of the Abbey by the monks, an abandonment which - especially with regard to the land - continued in the following centuries. In 1980 the Lena family took over the company with the intention of creating a model winery: vineyards where the grapes are harvested by hand, during the cooler hours; a modern wine factory where the white grapes are cooled before being pressed and the red ones are macerated for a long time; a cellar where the white wines are stored sur lies at a cool temperature and the great reds age in French oak barriques.
